1. Fhior

Minimalistic Fhior brings seasonal and fresh Scottish food to Edinburgh from chef Scott Smith. The restaurant is split between the main dining room, and a small, relaxed front of house cafe-bar which serves coffee, pastries, snacks and drinks. 

Their set tasting menu uses ingredients from their kitchen garden which is based just outside of the city, as well as produce from local suppliers and foragers. They use techniques like fermentation, tinctures, and drying to preserve seasonal ingredients for future use. 

The dishes are elevated and precise, for example serving translucent slivers of raw halibut with a simple lime, spring onion and rapeseed dressing, and a creamy white chocolate mouse with a crumble base, spiked with seaweed, barley, and cheese. The menu describes the dishes using their base ingredients – eel, celeriac, crab, duck and fig leaf. 

The wine menu follows a similar path to the food, with Fhior working with smaller producers around the world.

2. Cannonball Restaurant & Bar

This award-winning seasonal restaurant has beautiful views of Edinburgh Castle and the Royal Mile. 

They offer monthly changing seasonal a la carte menus, set menus, and a seasonal tasting menu. All showcase the best local Scottish ingredients from artisan suppliers.

Their tasting menu is designed to showcase the best of Scotland, with everything made fresh in-house and dictated by what’s in season. It includes six courses, with an optional wine pairing.

Expect high-quality meats like pigeon, crab, and beef paired with the freshest vegetables and finished with a cheese board and dessert. Vegetarians don’t have to miss out, as they have a separate Vegetarian tasting menu with unique dishes.

3. Six by Nico

If you want some fun with your supper, head to Six by Nico in New Town. Every six weeks, chef Nico Simeone creates a new six course menu based on a specific theme or place – previous menus include a gourmet take on a chippie and Willy Wonka inspired plates. 

Booking here is essential, and you’ll often see queues out the door. It’s also one of the more affordable options on the list, with the menu priced at £32. 

The restaurant is relaxed and has a retro twist, with a moody, romantic vibe in the evening. Dishes are creative and innovative, and well-paced, so expect to be here for a couple of hours.

4. Wedgwood the Restaurant

Expect a modern Scottish menu combined with a warm, relaxed atmosphere at Wedgwood. Set in the heart of the Old Town on the famous Royal Mile, it’s earned its reputation as one of the best restaurants in the city. 

It’s much loved for its eclectic menu, with many dishes using foraged wild herbs and leaves, inspired by the seasons. The menu gets a complete overhaul four times a year to reflect the seasonal produce, and is tweaked on a daily basis to ensure all ingredients used are the freshest possible. 

Their ‘Wee Tour of Scotland‘ tasting menu is £80 (£70 for vegetarians) and includes 8 courses. Expect dishes like shetland scallops with cauliflower, pineapple, capers, peanut & pistachio dust, and deer loin with black pudding & potato terrine, buttered spinach, celeriac, brussels sprouts, pancetta and cranberry.

5. The Cellar Door

This stylish & contemporary spot serves an a la carte menu and a six course ‘Taste of Scotland’ tasting menu, with a meat and vegetarian version available. 

Expect dishes like tempura Shetland mussels with red pepper salsa and fennel jelly, and Ayrshire pork belly with black pudding puree, pork croquette, and mustard jus. 

Each course can be paired with wines for an additional charge, and you can also pay for extras like a local cheeseboard and ruby port.

6. Purslane

Come here for casual fine dining. Purslane in Stockbridge does five and seven course tasting menus in a trendy but unpretentious setting. They’ve garnered lots of praise for their modern, seasonal cooking.

They use local produce where possible, cooking beautiful dishes with European flavours. Their 5 or 7 course tasting menu might include pan fried scallops with celeriac puree and samphire, and roast rump of lamb with parmentier potatoes, red wine jus and peas.

7. The Kitchin

The Kitchin is known for being one of the hardest destination restaurants in Edinburgh to dine at, due to its Michelin Star. The plates here are creative, with every ingredient carefully considered and tweaked into something amazing, with veg carefully tweezered onto each plate and perfect sauces foamed or emulsified. 

Head chef, Tom Kitchin, is much loved in the Edinburgh food scene, and for good reason.

They have a range of tasting menus, and if you specify dietary preferences or allergies these will be catered for. Expect dishes like roasted scrabster turbot, with Free Company Jerusalem artichoke, leek, in a red wine fish sauce and line caught Devon tuna tartare, with Petrossian Daurenki Tsar Imperial caviar, barbecued belly, and radish.

8. Aizle

The six course tasting menu at Aizle is a celebration of the seasons, shining a light on native Scottish ingredients. You’re given an ingredient list at the start of your meal to guide you through the dining experience, and the staff will take you through each course.

Most of the menu elements are produced in house – from the live ferment used in their sourdough, to the hand churned butter that’s paired with it. 

The drinks menu gets just as much love, as they create their own soft drinks and cocktail ingredients. The international wine list shines a light on smaller producers.

9. Timberyard

Head here for seasonal fare and the highest quality ingredients. Timberyard is a beautifully converted, scandi-inspired warehouse a few minutes from Grassmarket. They have a focus on ingredients from local growers and suppliers, giving them a Nordic twist. The menu is fresh, seasonal, simple but still creative – for example their caramelized pork belly with buttery cabbage, kimchi, salted apple and roasted pink fir potatoes in a shallot glaze. 

They do a lot of pickling, curing and foraging, and you’ve got to try their homemade kombucha.

10. Heron

For an amazing Michelin-star experience, Heron doesn’t disappoint. Chefs Sam Yorke and Tomás Gormley are the youngest in Scotland to get the recognition, and have made a huge impact on the city’s dining scene since opening in 2021.

The menu spotlights farm to table dining, and they have an a-la-carte and two tasting menus on offer. The dishes are heavily fish-inspired with playful pairings like Orkney scallops with ponzu and sourdough with brown crab butter.

11. The Table

For an intimate experience, you can’t beat The Table. They have 10 seats, one table, and a killer tasting menu. You get to watch the chefs at work in the open plan kitchen, creating a sense of theatre as you eat. 

You’ll have to book months in advance for a seat here, but the creative tasting menu is well worth it. Note that they don’t do any substitutions, so what you see, is what you’ll get.

Expect dishes like patridge raviolo with chestnut and rosemary, and witch flounder with cauliflower, bacon and tangerine.

12. The Gardener’s Cottage

The Gardener’s Cottage is a truly magical spot, with its quaint decor and energetic atmosphere. They serve seasonal food that connects the diner with the producer and landscape. 

Originally home to the Royal Terrace Gardens’ gardener, it was renovated to make a wee restaurant.

Choose between a five or seven course menu that changes every month, and features a mix of meat, seafood, and vegetables. You’ll be seated at communal tables with other diners, making it a social experience.

This modern bistro serves a seasonal, ingredient-led menu with a focus on sustainability. Decor is slightly stark and minimal, but in a pleasant way.

Meaning journey in Gaelic, Taisteal’s tasting menu used Scottish produce and recipes from around the world. This family-run restaurant was developed while travelling in China, made a reality by husband and wife team Gordon and Lucy. 

Dishes like gochujang glazed salmon and tikka scallops take the forefront, and they’ve also previously featured gourmet takes on prawn toast and pasta. Desserts are extremely decedent, and the wine list is extensive.

Serving classic Scottish seafood with a modern twist, this spot from Dean Banks is a must visit for fish lovers. This neighbourhood spot is perfect for cosy and relaxed dining, with an intimate wine bar downstairs, and the star of the show seafood restaurant upstairs. 

Their tasting menu changes daily, as it depends on what’s caught that same day so you get the highest quality dishes. You’ll get traditional flavours like Arbroath smokie tart and lobster thermidor mixed with worldwide influences like banana leaf steamed hake.
